I was pretty beat on Monday, and all around giddy to have the day off. Tired from work and giddy from no work, an odd combination.
I tried to cobble together something with my mom and dad for the day off with bbq and pie. My mom was not feeling good the last few days of the week so not much input there, but I know she needs her rest. So I
put my frustrations in check and ran on out and picked up some meats and did a quick marinade and had a little barbecue. Applehead came and really helped me out, getting water and fighting off mosquito/rhinoceros hybrids that live in my parents back yard. My dad had a stroke a few years back and is in a wheel chair, but he is getting more mobile and more verbal everyday. Well he can talk just fine now just raspy. He used to do all the cooking in the house when I was younger and so my want and love of cooking comes from him. So of course, I can’t cook anything right with dad watching lol. But it was a great time regardless.
Lots of smoke from the pit, I constantly told my niece that smoke follows ugly people whenever the wind blew her way to keep her continually running away from the hot grill. A trick from my dad when we were younger.
We had some hot dogs, Hebrew national, hamburgers that my sister made, pork chops that my sister prepared, some pork cutlets that I marinaded for several hours, corn seasoned with parmesan cheese, butter salt and lime, corn tortillas, chicken legs and a huge pot of baked beans and apple pie from my mom.
I didn’t get the Corn tortillas in the pictures but they were so good all crisped up on the grill and smokey.
The pork cutlets were nice too. Marinaded in Soy sauce, Honey, lime juice, garlic and ginger.
My dads grill is a monster. I love it. He always jokes that its a “REAL GRILL!” and “it don’t play around” I need to get some pics of it the next time I go over. It is pretty much a pair of pits like the old ones made from metal barrels or drums. have been welded together and placed on a set of wheels, and a door on one side for air flow and a smoke stack for the same on top. A huge monster.
